Roasted Herbed Sweet Potatoes

Hi everybody – I hope that you all had a fabulous weekend! I have been trying to get back  into the kitchen lately and I wanted to share one of my favorite recipes with you:  “Roasted Herbed Sweet Potatoes.” It was an experiment, but it actually turned out wonderful – don’t you just love when that happens?!? It’s super easy and quick for a busy weekday. Also, goes great with chicken and tastes really good with or without ketchup 😉

Roasted Herbed Sweet Potatoes
Serves 1

Ingredients:
1 medium sized sweet potato
3/4 Tbsp Olive Oil
1 tsp Parsley
1 tsp garlic powder (I didn’t have any cloves!) or 1 clove Garlic (minced)
1 tsp Salt
1 tsp Pepper

Directions:
1.  Preheat oven to 350 degrees.
2.  Wash and cut sweet potato into cubed-sized pieces.
3.  In a small bowl – mix sweet potato, olive oil, parsley, garlic, salt, and pepper.
4.  Bake in oven for about 25 minutes – depends on the oven and I like mine crispier. (I used a small sheet pan).
