Shrimp Fajitas

Feels like forever since my last post (about a month actually, sorry!), but life kind of has gotta in the way recently! Now I’m back though and ready to share one of my newest favorite dinners with you all.

Lately, I have been seeing a lot of posts on Pinterest about one-pan meals and I think that they are amazing! Such inventive ideas that are perfect for when you need a quick dinner for a busy weeknight (and I’ve had a lot of those lately!). The first one-pan recipe that I attempted was “Shrimp Fajitas.”

I mean don’t they just look delicious?!?!?! And trust me they are! Follow this link for the recipe for “Shrimp Fajitas“. The only things that I changed were: I didn’t add cilantro and I added fresh onion and garlic instead of onion/garlic powder. Mine also took a bit longer than what they said. But, they were still fantastic!

  1. Shrimp fajitas are a great idea. I can’t believe I have never had them. Is the Vitamin C from the peppers at all significant?

    You and your number one fan have a bond that will never diminish. He must have been so proud of you.
