Hello everyone! Lately I have been craving pesto pasta, even though I thought pesto was pretty gross when I was younger I happen to love it paired with pasta now! 🙂 While researching on Pinterest I came across a “Kale Pesto” recipe. We grew kale again in our garden this year and our crop was looking very plentiful, so I thought I would give the kale pesto a try.
I followed A Spicy Perspective’s Kale Pesto Recipe. However, I did change a few ingredients: I used pine nuts instead of walnuts and added a few basil leaves just because they needed to be used. I also added about 1 tablespoon more of parmesan cheese just because I thought it needed a little bit more and you all know how much I love my dairy products!!
The pasta turned out delicious and this recipe is definitely a keeper. It is fresh, light and the perfect summer dish!
