Hello everyone! I am officially done with 2 out of 3 of my internship rotations and one step closer to becoming a Registered Dietitian 🙂 (**currently dancing my happy dance**)!!!
I have decided to start a new series on the blog: “5 of My Favorite Foods.” Every now and then I will share with you five of my favorite foods that I am “loving” at that time. As a person in the nutrition field a lot of people ask me, “well…what do you eat?” So, this is a way for you to get an inside look at what someone eats, who went to school to learn all about food!
Like I have said before it’s all about moderation. You can eat anything and everything as long as it is in moderation! I am not going to lie, there may currently be a carton of ice cream in my freezer…but it’s all about not feeling guilty and learning how to treat yourself every once in awhile 🙂
So, lets get started….here is the first installment of “5 of My Favorite Foods”:
1. Peppers:
I used to never eat peppers, but now I can’t get enough of them! I love how vibrant and colorful they make my dishes look. Last Sunday, I cut a bunch of peppers, carrots, and onions so that I could make my Veggie Tacos all week long. It was the perfect quick and easy lunch to make during my busy week.
2. Bananas:
Okay, so I used to hate bananas! I just have never liked the consistency. However, last week I was at an internship event and decided to try one again and loved it! I’m super excited about this, because they are a good source of potassium which I lack in my diet and are the perfect grab and go snack!
3. Spinach:
So, I have been called a rabbit once or twice before! But, you know what? I am proud to eat like a rabbit and honestly truly enjoy it! Spinach is one of my favorite “rabbit” foods and I eat it plain, with no dressing, right out of the bag. (Like I said I’m a rabbit!) Also, a plus that it contains a lot of nutrients, including vitamin K and zinc.
4. Dark Chocolate Covered Strawberries:
This was my treat of the week! For Valentine’s Day I made myself some delicious dark chocolate covered strawberries and snacked on them for the rest of the week. And there’s strawberries underneath the chocolate, right?? 😉
5. Sweet Potatoes:
This is another food that I would have never touched five years ago. Now, I can’t get enough of them. See, what happens when you try new things? I love turning them into fries or just popping them into the oven plain and eating every last bite of them. And they are a great source of vitamin A!
So, those are “5 of My Favorite Foods!”
Happy cooking and eating! And, stay tuned for more from the Picky Girl!
Kristen, congrats on completing two of internships. Looking forward to seeing you back in Shipoke. From Italy, Ciao. Ed
Thank you Ed! See you soon, Kristen
