Avocado Quesadilla

Happy Cinco de Mayo everyone!  When I normally make quesadillas I make a plain cheese quesadilla, because of the picky eater that I am.  Recently though, I decided to mix things up a bit and try something new and thus the “Avocado Quesadilla” was born!

Ingredients: (1 serving, 1 small quesadilla)
1/2 an Avocado
3 grape tomatoes
1/4 cup Mexican Cheese
2 Flour Tortillas (Follow this link to make Homemade Tortillas)

1.  Put ingredients in between two tortillas.
2.  Cook in skillet for about 5 minutes or until cheese melts and sticks the two tortillas together.  Remember to flip quesadilla for even cooking.
3.  Enjoy!

Don’t let this nutrition information scare you!  Yes, this recipe is a lot of calories but it fills you up even though it is a small quesadilla.  I also could have used better quality tortillas and cheese, but I’ll be perfectly honest I’m a poor/busy college student and don’t always have the time to make homemade tortillas.  The avocado added a good amount of calories and fat, but remember that they contain the “good” kind of fat, monounsaturated fats.
