Hello everyone! I hope that you all enjoyed your weekend! I used my weekend to try a new Picky Girl experiment, “Veggie Tacos.” These tacos are my attempt at a recreation of some that I had while in Mexico. I forgot to take a picture in Mexico, because they were so yummy that I ate them rather quickly! So, I figured that I had to recreate them to share them with you! In my personal opinion I thought that they were delicious! They were easy to prepare and the perfect thing to make on a busy school night. Hope that you enjoy them as well!
1 large carrot
1 green pepper
1 tablespoon of olive oil
4 small tortillas (follow this link to make your own: Homemade Tortillas)
1. Chop carrot, pepper, and onion.
2. Sauté chopped vegetables in olive oil for about 5 minutes.
3. Scoop vegetables onto tortillas and enjoy 🙂
