Happy Saturday everyone! I hope that everyone is enjoying this beautiful weather! The newest Picky Girl adventure was powdered peanut butter. It seems to be one of the latest trends and I figured it was time for me to try it. I used PB2, but there are a lot of other kinds. I haven’t heard much about it and wanted to see if it was worth the purchase. Looking at the ingredients though it is mostly made out of peanuts so I think that it is pretty good, especially if you want to add a little protein to some dishes without the fat. I was surprised that it only has 4 grams of protein in it, I thought that it would have more but that is still a nice amount. I’m not sure what else it would work in, I will have to experiment and let you know! My first experiment with it was with muffins and they turned out pretty tasty if I do say so myself!
1 mashed ripe banana
1 egg beaten
1 Tablespoon Canola Oil
1 teaspoon vanilla
3/4 cup whole wheat flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup oatmeal
3 Tablespoons chocolate flavored powdered peanut butter
1. Lightly grease a 6 cup muffin tin.
2. Preheat oven to 375 degrees.
3. Mix mashed banana, oil & vanilla. Add dry ingredients. Stir until combined. Divide batter among muffin cups. Bake 15-20 minutes until toothpick inserted in center comes out clean.
