Spaghetti with Tomatoes

Hi everybody!!  Hope you all had a wonderful week!  I’m officially on Spring Break so I am super excited!  I have always loved spaghetti, it has been my go to dinner for awhile!  I decided to spice things up a bit and add something new to my normally plain spaghetti.  I normally don’t care for tomatoes but I recently discovered that I love them in pasta!  They sort of make a light tomato “sauce”!  It doesn’t take too long either which is great for a busy college student!  I hope that you enjoy this recipe as much as I do!

20 cherry tomatoes
Spaghetti (enough for 3)
1 Tbsp Olive Oil
Garlic Powder (just a pinch, you can use fresh garlic, I just didn’t have any)

1.  Boil water.

2.  Cut tomatoes in half.

3.  Sauté tomatoes in olive oil and sprinkle garlic powder on top.  Sauté for about 5 minutes or until the tomatoes “burst.”

4.  Cook spaghetti as directed on box.

5.  Drain pasta.

6.  Mix olive oil tomato mixture with spaghetti, sprinkle with a little cheese if desired, and enjoy!

This dish is very versatile, you can add other vegetables to it, such as asparagus!  Be creative and enjoy!

    This sounds so easy! I have made a similar version by roasting the tomatoes in the oven. It really “pops” with fresh basil. Thanks for the healthy tips your version looks much less messy than mine.
