Those of you who know me, know that I am not the biggest meat eater in the world. So, the newest adventure of this picky eater was my Mom’s Turkey Meatballs. And I have to say they were very tasty! I highly suggest trying this recipe, because they are not only good but they are good for you. She packed the meatballs with lots of yummy ingredients and even snuck a zucchini and some flax seed in there. Plus, another bonus, they are a great source of protein!
Ingredients:
3 lbs ground turkey
1 large zucchini, grated finely
1 small onion
2 garlic cloves
1 tbsp fresh parsley, chopped
2 tbsp flax seed meal
6 tbsp water
1 cup breadcrumbs
1/2 cup grated Romano cheese
pepper
Directions:
1. Put all ingredients into a large bowl and mix together, with hands, until blended together.
2. Shape about 48 golf sized meatballs and place on baking sheet.
3. Bake at 350⁰ for 25 minutes.
4. Serve with pasta and marinara.
