Roasted Asparagus

Happy Monday everybody!! Today was officially the last Monday of my junior year of college! I cannot believe how fast time flies. I am super excited for finals to be over and for it to be officially summertime!

Today’s yummy recipe is Roasted Asparagus! I made this version in the oven but asparagus is also super easy to throw on the grill for a tasty summertime side dish.

Asparagus is a good source of folic acid, potassium, and Vitamin K. Folic Acid helps the body form red blood cells. Potassium helps to maintain a healthy blood pressure. And lastly Vitamin K helps with the synthesis of blood-clotting proteins and bone proteins.

Here is my recipe for Roasted Asparagus:

Ingredients:

1 bunch of asparagus
1 1/2 tablespoons olive oil
1 tablespoon Romano Cheese
Salt
Pepper

Directions:

  1. Preheat oven to 400⁰.
  2. Wash bunch of asparagus.
  3. Toss asparagus with olive oil. (I used a loaf pan).
  4. Toss in grated Romano cheese.
  5. Sprinkle with salt and pepper.  (Just a dash of each)
  6. Spread asparagus on baking pan. (I used a stone baking pan with raised edges to prevent rolling)
  7. Bake for 30 minutes.
  8. Enjoy 🙂

    This is my favorite vegetable to grill. I do the same steps with zuchinni sliced in long slices the whole length. Tossing with lemon juice is delicious if you don’t have grated cheese.
