Who doesn’t love guacamole?!?!? I found this recipe in The Good Housekeeping Illustrated Cookbook. This is the same cookbook that I used in my foods lab last semester; it’s great and has tons of awesome recipes! I copied the recipe directly from it because I followed their exact directions. Hope you enjoy this delicious recipe and enjoy the rest of your weekend!
1 medium tomato
2 medium avocados
2 tablespoons lemon juice
1 teaspoon salt
½ small onion, minced
1 small garlic clove, minced
1 4-ounce can chopped mild green chilies, drained
Fresh coriander leaves (optional) [I didn’t add any]
Potato chips or fresh vegetables [I chose to serve it with tortilla chips]
1. Peel and dice tomato. Then, cut each avocado in half lengthwise; remove seed; peel.
2. In bowl, mash avocado with lemon juice. Stir in salt, tomato, onion, garlic and chilies.
3. Spoon into medium bowl. Garnish with coriander if desired. Serve with potato chips.
